Why was he calling me ma’am all the time and this one time he didn’t call me ma’am?

He’s a hotel worker and like 60 years old, he’s older than my mom and younger than my dad. I’m young enough to be his daughter. Anyway he always addressed me as ma’am when he ran into me, like 4 or 5 times already. Then yesterday he didn’t address me as nothing but did acknowledge me. Did I look old on the days he addressed me as that? Or did he realize I’m not as old as he assumed I was? I’m only in my mid 30’s.

People in service are usually required to address guests in such a polite manner. It is a very formal way of addressing a woman and has nothing to do with your age. For example, a butler at Buckingham palace would be expected to address little princess Charlotte as "Ma'am" and not "Miss" even though she is only 6 years old.

Possibilities for him calling you Ma'am

1. He is saying out of respect to a woman.
2. He is hotel worker and didn't say about yourself assuming you are in post higher to him
Or you being a stayee in hotel and so he called you Ma'am.

In any of above case or other if any it has nothing to do with your age. He is just being polite with lady.

He probably calls all women who are not obviously young as Ma'am as a sign of respect.
