Why did this guy go from interested to irritated?

I guy that I was seeing and who at that time showed a LOT of interest, started being/ showing general irritation short after I started showing interest back, what could the reason be?

This has happens to me before, where everything is going well and then, when I start showing affection back they start showing small irritation on things i say as if they regret the situation and want to me like them less again?

Perhaps you lack personality and the man has to carry the entire load of conversation. This is pretty common. Just being pretty and showing up gets old pretty quickly.
