Got asked to grab a coffee, but then left on read?

this guy i met asked me if i would like to grab coffee sometime and i couldn't reply until 2 hours later saying "sure, i'd love to! but that i am busy this weekend, how about the next weekend?" but since then I've been left on read, why is that?

There really could be a million unexpected reasosns...
Maybe his phone got broken maybe he dosent have connection maybe he sent a reply but something glitched maybe he somehow got his massege deleted as a prank maybe he got in a car accident...
Could be litterly anything... If he asked tou out then he is interested (unles it was maybe a prank or a joke with his friend maybe)
But really no one can tell the real answer but him...
You just ignore it and give him the benifit of the doubt

If your timings are that off kilter its probably a case of him just busy trying to clean up things on his end so he can clear that weekend. I wouldn't be surprised if he offers up to extend the date/coffee. I'm sure most guys wouldn't admit it but as of late most guys are kinda starved when it comes to being able to interact with the other sex.
