I’ve been talking to a guy for over a year and now I feel like he thinks I’m too available. If I don’t respond to his last text which is just telling me he was drunk yesterday, would it peak his interest or end this?

No, it does not. If a woman thinks it will then that she is very wrong. On the contrary it can make the guy withdraw and lose interest very fast.
