If my co-worker arbitrarily invites me to the office to see him next week after I already quit is he interested in me romantically?

Over the last month I realized my supervisor has been nicer to me than usual and I think flirts with me e. g. by commenting on my shirts and asking why I won’t ask to get to know him more. I’m technically done with my internship and did all the paperwork that needs to be done. However, in the last week he wasn’t in the office because he was suspicious he would have covid. He then messaged me saying it was sad he couldn’t be there on my last day and invited me to the office on Monday. It might just be a friendly thing but i think maybe he wants to see me once more? I can’t even tell if he wants me to come to spend the day or if he just wants to say bye. The others in my team also liked me but they never really showed serious interest to see me once again except casually mentioning it. Could there be something more that this guy wants?

Him asking to come in Monday so he can say goodbye could just be a friendly professional gesture, BUT him asking why you don't try to get to know him more is 100% absolutely something a guy would say to a girl he's interested in romantically.

Well to be more specific, he said that while I asked others how they were doing I wouldn’t ask him the same question. He also said I was the only one who didn’t celebrate his birthday. What’s this behaviour I can’t tell? Because I never meant to hurt him so he made me feel bad saying those things 😂

That sounds like "you hurt my feelings!" flirting that a lot of guys do. If he didn't like you sexually he wouldn't say things like that lol. He wouldn't even care if you talked to him at all.
It also kind of depends on how old he is. Older guys flirt with younger women just to do it, but don't actually expect any recourse and may not even have any intention of getting with them. But if he's around your age he definitely wants a shot with you. Sorry if that's confusing
