Why would a guy (who’s been rejected multiple times by girls he was interested in) reject a girl who’s interested in him?

For the same reason a girl who has been rejected by several of the 6'/ 6-figure good looking guys won't date any guy who happens to hit on them.

He's not looking for just any woman that'll have him at this point, and apparently the girl he rejected falls below that standard (probably based on looks).

Because he can´t believe that she has a genuine interest in her. The issue could be that because he probably was rejected one too many times so to say he has given up on love. What he needs is the realisation that he´s not doomed to be single for ever and that he developed a trauma out of it that needs to heal before he can see relationships and women in a better light and enter a healthy relationship.

Because he's not interested. Being rejected doesn't mean you're going to go out with the first person that comes along just because she asked or is interested in him.
