• Age gap of 7 years, I’m older than he is; He mentioned that if he were my age he’d be married by now, but I explained to him how seriously I take marriage (if I marry a man it’s for life, regardless of circumstances, good or bad, I’m in it until I die), and how it’s not easy to find someone with that level of commitment

Sounds by your details he is openly flirting while in a relationship. He is also being very vague about the status of his relationship. That tells me he is testing the waters to see if there is any interest from you.

Seems like his behaviour would indicate the same thing, slowly progressing the flirting to see what your reactions are. I would back off this one and stay respectful like you have been to the fact that he is in a relationship.

Next thing I would do is ask yourself if you would even want to be in a relationship with a guy that does this. Let's say they break up and you two go out and date. Aren't you going to have it in the back of your mind that he could be doing the same thing to you at some point?

Going around saying (about you) "she is doing her own thing" while flirting with other girls? That would be my problem and to be honest all this is a massive red flag to me personally.

Yes I have been paying close attention to this; I’m unsure if we’ll ever date because I have certain dealbreakers (I’m a Christian and I believe in courtship, which is different from dating); In addition if he were with me and I found out I would cut the relationship off immediately, because he knows what I stand for and the ideals that I carry.
