Why would he care what I think about him?

I have a crush on this guy. He knows I like him. I asked him if he wants to grab a bite to eat or go get coffee. He said he wanted it to be a casual hangout , not a date. He said he only sees me as a friend. A few months ago, I told him he looks nice with his hair down instead of spiked up. Ever since then, he has always kept it down. He hasn't spiked it up. Why would he care what I think about him, if he only sees me as a friend?

You are way overthinking this. Just because someone changes their looks because a person made an observation doesn’t mean anything. All it means is you put the thought in his head and he probably went “hmm, I think she is right. This does look better”.

He has made it clear he views you as a friend and nothing more. You need to accept that. It would be no different than someone you view as a friend having a crush on you and you not wanting to pursue it. Think about how you would feel if you felt pressured. Just be happy he wants to be friends.

As far as why does he care? Do you not care for your friends? I’m guessing if you really think, you will find that you do. At least, you should care for your friends. What if one of your friends got real sick. Are you saying you wouldn’t care? That’s what friends do…
