There's something about acknowledging something that just takes away the excitement. I don't know why you need him to expressly say the words when he is making it so obvious, but I would suggest that you take a moment to just enjoy things for what they are.

I suspected that because it felt somewhat, as though he felt he wasn’t confident when he said “I like you too” it sounded so fake.
