How do older men (40+) act around the woman they fancy? Do you get nervous?

Generally, no, we don't get nervous because we've "been around the block".
In general, ...
>>>> Being "nervous" is a symptom of fear and fear is borne of ignorance.
Experience educates and thus wipes out ignorance and thus wipes out fear and thus wipes out symptoms of fear including being "nervous".
This holds for everything in life.
Now, for your question, men of that age have been adults more than 1/2 of their lives and so they have plenty of experience with the mating game between men and women and they no longer feel the fear from ignorance.
I act the same as I always do, I'm pretty confident, but certainly not cocky. I remain calm and just try to get to know her like I am making a new friend.
I'm a bit of ham/jackass so I may try to get a rise out of her and make her laugh to break the ice. I have no problem making fun of myself.
In the end, if it doesn't work out, my hearts not gonna tear into little pieces. Things happen for a reason.

It’s why my dating ages range up and down the scale, i’m not arrows to ask. i have dated girls from 19 to 61. Never feared rejection. it’s harmless.
It depends on the circumstances. I generally try not to be alone with a girl I'm attracted to because I'm married. But yes, even at 51 I get tongue tied around girls.
If there is a solid reason I think she might be interested I get a little nervous, but in general I'm immune to such thoughts these days.
