There was another time he was talking to me and I was looking down trying to scrape a sticker off a counter.. he kept trying to get me to look up at him.. saying ‘huh?’ When I know he heard me, like he wanted to make eye contact with me so he isn’t awkward about it all the time.
Could be a little thing called, shyness. Maybe, under certain conditions, he feels (for lack of the correct term) belittled by what you're saying (not so much THAT you're saying it but maybe he's had discussions like that with, maybe, his parents or boss, quite often, that made him feel that way so, you two talking about such things could throw him back into feeling like that. He may eventually stop doing that. Like, when my ex-fiance got a used dog that came from a very abusive home. For the first several weeks. months, I'd reach out to pet Gina and she would suddenly jerk away from me like I was gonna hit her. Eventually, she discovered that I'm not gonna treat her that way and was perfectly fine with me petting her.
Sounds like definite nervousness, like from being self-conscious

That is a shyness without a doubt, that would be me. He must like you and or find you very attractive. Guy is obviously scared out his mind talking to you.

He probably has some sort of social anxiety.
