Sometimes, when I said or showed something to him, he would reply with "Interesting" and I'd ask what's interesting about it and he'd ignore the question or give me an i don't know it's just interesting as a response.

This could be totally different then what your scenario is.

But I say interesting and just do the obligatory "oh yeah" convo. When someone is explaining or showing me sonething they totally missunderstood.

I only do that when there is no real reason to call someone out for being wrong if it is harmless.
