Why did this guy push my hand away?

I have a guy friend that I am attracted to. He is a conservative christian and I am not.

He shows signs that he likes me.
But today I held his hand to read the lines on his palm jokingly. Because we were having a conversation about fortune tellers.

When I grabbed his hand and opened his palms he pushed my hand away abruptly.
But then he put his hand around my shoulders and rubbed my arm.

He probably been guilt-tripped at church to the point where he sees the devil everywhere. When you made a faux attempt to read his palm he probably thought it was a bit too close to the occult and spazzed out. I'm a Bible-believing Christian by the way, but I don't just suck up whatever some preacher tells me.

A conservative Christian may have reservations about palm reading even if it's just joking and playful. It has it's origin in the occult.

That sounds like... I don't know why but I'm getting the feeling that he's afraid you'll think of him as more then a friend. Which sounds odd since you say he shows signs that he's attracted.

If he's conservative enough he may have been worried about the idea of you fortune telling. There are people who genuinely believe palm reading is the devil's work.
