Gaining muscle doesn't mean you lose your shape, though the numbers on the scale would go up.
Cornbread is not useful for gaining muscle mass. Protein is useful for gaining muscle mass.
Any squats might help build glutes, but optimal weight would be heavy enough that you could only perform sets of perhaps 10-12. If you can do more, ideally you'd use more weight. whether its barbell or dumbbell doesn't matter so much. Note that if you are holding the weights at your sides, rather than shoulders, its more of a deadlift than a squat.

if you build any muscle then you will gain weight unless you sort it out with building muscle and losing more fat. but its muscle so its not bad weight, its good weight. you'll look even better regardless of what the scale reads.
I think protein would be best to get muscle mass in your ass ;P
