If we're being real, there are different types of vegetarians. I eat eggs and dairy, so I'm a lacto-ovo vegetarian.(But I never say that, I just say vegetarian) But some people don't eat dairy or don't eat eggs, but consume the other. I think herbivores eat strictly plant type foods as adults, whereas human vegetarians often do consume animal protein as adults. And if we're really being real, cows are herbivores but eat animal protein in the meat industry, so, it has NOTHING to do with if something is capable of digesting the protein source or not. So, I will say, I think it's because one has control over what they eat, so it's a diet, vs the other would typically do the evolutionary hardwired thing because they just do.

I think because herbivores are naturally set up to eat only plants; eg. the way they digest things, the shape of their teeth, the nutritional value they can get from certain foods, etc. Herbivores would get no nutrition and might even be harmed from eating meat. Humans who are vegetarian on the other hand could eat meat and benefit, they're biologically equipped to be omnivores, but they choose to abstain from eating meat.
It's like the difference between being a sex repulsed asexual and being celibate; the asexual feels no sexual attraction and has an aversion to sex, whereas the celibate person experiences sexual attraction and may enjoy sex, but they make the conscious choice to abstain
Because "herbivore" describes an anatomical and physiological predisposition to a food source.
They don't want to be compared to other animals that don't eat meat.
I think it's because humans as a species can live on both. We just choose to indulge in one more than the other.

Vegetarianism is an ideology herbivore is biological. Vegetarians choose not to eat meat, herbivores are incapable of eating meat.
I would assume that it's because we refer to animals as herbivores and they probably didn't want to be referred to in the same way.
It's just a definition of species rather it being defined a personal choice.
I actually do say that, I also call meat-eaters 'carnivores' to keep it fair :P

Herbivores can only eat and digest plants. Vegetarians are still able to eat meat and digest it as part of their biology. A true herbivore couldn't.
