I'm finding myself depleted during my workouts. Either I can do cardio first and nothing else or do some weights first and absolutely no cardio after, why is this and what can I do?
I don't take energy drinks or pre workouts as it gives me the jitters and makes me a little manic

Even with optimal diet and recovery, I think some people's central nervous system just can't handle as much as others. Especially if you've experienced a lot of stress in life or still do. Stress exacerbates systemic fatigue.
I feel a similar depleted feelings if I incorporate intense cardio into my life. I have an over-sensitivity related hearing condition that forces my brain to perceive audio vibrations above 60db as damage to sensory cells &/or the nerves connected to them. So, when I'm exposed to more painful (everyday/normal) sounds, the stress doesn't allow me to train as hard or recovery as well. And I'll be more irritated which will bring on even more stress due to the Matthew effect.
So on weeks where I really want to train hard & do cardio, I try to minimize stress as much as I can. And I make sure to rest at least 2 days in a row that week. I rest on days where I know I don't have to do anything stressful to the body in any capacity. Whether it be mental or physical. I try to eat in a slight caloric surplus. Try to time my foods in intelligent ways for the energy or recovery I need. Have proper warmups & form. Etc.
Also, don't underestimate the power of electrolytes. Anytime you do high intensity exercise, be sure that you're getting a consistent and balanced amount of sodium, potassium, chloride, calcium, magnesium, phosphate, bicarbonate, and sulfate.
Do one or the other one day and the other day do the other, it's what I do.
Years ago, I tried doing that and it was too long, dreadful, boring and just not happening more than two times before I gave up on that routine.
Break it down. Do cardio one day, two days later do weights, two days later cardio, two days later weights, stretch on the off days in between...
I've Learned that the most important part of working out, is to enjoy the work out itself. If ur doing it just to say, I work out, it's not going to last long.

If you get easily tired, you might have fat in certain organs of your body that are needed to metabolize fat. Once that organ fat is burned off, the tiredness will disappear and you will be able to handle much more time in the gym.
