I think it can come across as high maintenance.
The things that would worry me about dating a vegan would be:
1. Will I have to plan dates around their eating habits? (i.e. what restaurants can we go to? what if I want to make them dinner, or invite them over for dinner at my place? etc.)
2. Will they judge me for eating meat and other animal products?
3. Will they want to try to make me become a vegan? (You say you don't push other people to go vegan, but they don't necessarily know that about you)
4. If we become serious (i.e. ever end up living together), I'll either have to eat what they eat (which I might not like), or we'll have to make all our meals separately.
Most Helpful Opinions
Many people so concermed about their food are particular about everything else, and not easy to get along with. So guys are a little wary of them. Not because they're high maintenance, but because they are hypercritical about minor things and not willing to pay attention to more important long term issues..
You're just picky about food and that can be viewed as high maintenance. The right guy will accept who you are, so don't worry about that.

Not sure if high maintenance is the word to describe it. For meat eaters, it's a bit of a hassle to plan night outs with vegans and vegetarians. I became a vegetarian for about a month and a half as sort of a health-centric experiment about a year ago. During that time, whenever I'd go out to eat with friends/family, they had to think about the vegetarian menu for me.
