Bison is super lean, and it's grass-fed per FDA regulations. Non-predatory cold water fish are another great option.
Also, don't forget about plant sources! Rice and beans combine to make a complete protein, as do nut butters and whole grain breads, and there's quite a few stand-alone complete proteins too. More info. here:

I don't think there is a 'best'. Eating a variety of natural protein sources will be better then always eating one.
And why lean? What are we back in the 80's and think fat will kill us again?
I get plenty from them too, but I actually think some animal fats are good as well.
I'm sure you could argue some sort of fish is the best animal protein source as long as the heavy metal content is low.
It's true that variety is best. Natural fats are healthy as they help protein synthesis and other functions of the body.

Personal opinion i'd say fish. It contains a good balance of protein and healthy fats/omega 3s. I love sardines, tuna, or salmon.
Variety is really key.
I think it's chicken. Probably the most affordable and easiest one to buy, where ever you go.
Chicken is super lean, but I love salmon for protein.
Deer is actually very lean and naturally tender..but um yeah.
