The old type are easy enough, they are just 7 pins but the 13 pin ones might be more difficult, I'm not sure.
All you are doing for the 7 pin ones is locating the wires that go into the rear light lens and then connecting the wires as per the instructions.
The hitch itself just bolts on, you might struggle to do or undo the bolts if you only weigh 6lbs but other than that you should be fine.

The rear quarter is not a removable panel it is an integral part of the chassis, damage to that area generally results in the car being scrapped due to the 2nd hand value of the remaining parts being a more viable option than trying to repair the chassis of the vehicle.
Yes, I installed a trailer hitch on my old Chevy. I got it from the junk pile and drilled some hole in the frame and bolted it on. I towed a 16 foot boat with it. I was a kid when I did this and looking back it was a miracle the boat did not get away from me on the highway.
If you get he hitch designed for your car it should bolt on easy with just a few hand tools.

yes, several. they are heavy, the bolt holes can be a bit rusty, sometimes have to cut plastic. if you are tenacious you can do it.
I’ve done lots on trucks and that’s a piece of cake, I doubt it’s much more difficult on a car

Yeah with my brother, it’s not easy but plenty of YouTube videos on how to do it and if you follow the instructions you could do it
