What do you do if your girlfriend says no to not getting married to a man?

Like do we continue the relationship, act like the marriage proposal didn't happen? What happens when the woman turns down the offer of marriage with a man?

It's the same if she turned down a marriage proposal to a woman. You decide if you want to continue as is or if marriage is too important to you and you want to end things. It's not that complicated really. Well, the options are not complicated, choosing which option to choose is probably harder.

That's up to you. If marriage is really important to you then you should go. If you are ok not being married and just being with her is important, then stay.

“No to not getting married” likely means she does want to get married. Move on if she is incompatible with you.
