How can I plan a surprise proposal when my girlfriend hates secrets?

I’ve been with my girlfriend for over 3 years. We have been living together for a year after leasing an apartment together last fall. I love her very much and really want to get engaged to her. So here’s the issue, my girlfriend loves to know stuff. She is very difficult to keep secrets from, she always tried to get onto my phone. She knows I want to marry her and even helped pick up a ring. I’ve been trying to coordinate with her sister and mom ideas for a proposal and then a big family surprise party afterwards. I really want it to be special and don’t want my girlfriend knowing. She always asks for my phone and tries unlocking it everytime so she can look at text messages cause she knows I’m planning stuff. When she was a kid she was the kid that would always try and peak at her Christmas presents before Christmas. So that’s a little background on what I’m dealing with. Anyway tonight she kept trying to grab my phone and was playfully rough housing with me and she got the phone in my pocket nearly ripping my pants pocket and out of fear that she will unlock it and see my engagement plans I grabbed the phone away from her. I felt like I hurt her cause of how hard I grabbed the phone. Afterwards she got really upset and wouldn’t talk to me and said she was going to bed. I tried apologizing but she didn’t want to talk. I feel absolutely terrible now, I would never ever lay a hand on her and if I hurt her when grabbing my phone it was completely an accident and I just want to really give her a special engagement but am scared she will peak and see my plans. Please help I don’t know what to do. Any advice would be appreciated. Thank you

I also forgot to add, the reason I haven’t proposed yet is I’m still paying the ring on layaway. I’m planning on purchasing it completely this month and then popping the question in mid to late October
