A lot of people are busy with their families on Christmas and try to stay away from their phones. Other people just don't find it necessary or think about it being important to text their friends/the ones they like. It could be a sign he's not that interested in you, but I wouldn't base your assumption solely on that.

I honestly am not a big fan of the "merry Christmas" texts and even find it annoying when I receive random ones from people I don't even talk to anymore.

Wouldn't read too much into this isolated incident. Perhaps he's like me and doesn't really care for the holidays. It could be used as a sign in a GROUP of signs of disinterest however. Keep us posted.
If I really liked a girl, I would take any excuse I could get to talk to her.
