The most obvious is the shape, meat loaf is similar in shape to a loaf of bread where Salisbury steak is shaped similar to a hamburger patty. Meatloaf is usually broiled/cooked in an oven and is served with a tomato/ketchup glaze, Salisbury stake is usually grilled and is almost always served with a brow gravy usually containing mushrooms.1

Well most of the time both suck.
But, salisbury steak is the favorite of school's to destroy.
Salisbury is flat, comes with gravy, and is usually cooked with onions or mushrooms.
Meatloaf is a loaf. You can cut it up, but you don't cook it in slices.0
