I would haunt a deeply religious person, just to troll the shit out of them. I would pretend to be the voice of their god, then just sit back and laugh my incorporeal ass off as they descended into insanity. Then I would move onto the next one and repeat the process. Yeah, I would be one ghostly asshole.
