Is it possible to hatch bird eggs after freezing the egg or the germinal disc for years?

Viable human eggs are being frozen for decades but they are only 0.1 mm in diameter. Bird eggs are much larger. Therefore, freezing would form ice crystals and the egg shell might crack. However, perhaps the germinal disc would survive or else it may be possible to freeze the germinal disc and reinsert it in a bird egg that has been frozen or into an artificial bird egg.

I guess it's possible like with other germcells. They get dehydrated, where water will be replaced with a fluid that doesn't build up crystals while freezing and cooled down in liquid nitrogen. It's not temperature close to absolute zero Kelvin and some chemical processes still happen over longer time span. It's not a solution forever.
That's why micro organism which very likely move in interstellar space from one planet to another over millions of years don't rally on cold temperature alone but on crystallization, like viruses and archeas do it.

I am sure it's much more complicated freezing human eggs and sperm but since it's already been done over the past decades science has improved. Much like technology science doubles every six months.

I'm sure they have the technology to do so, they're trying to recreate extinct animals from DNA

Let's hope so but trying is not the same as doing. Millions of seed are frozen in the Global Seed Vault in Norway. A similar vault could be done for mammals. For example, if we could the mammoth's DNA, it could be inserted in an elephant's egg and the elephant would give birth. However, freezing mammals eggs are simple technology compared to freezing bird eggs.
