What Should You Request From a Contractor Before Making a Payment?

Is there any document etc. that I should request before the payment? Or do you have anything you recommend me to do?

We had our bathroom redone on 2nd floor. The old one randomly leaked and the room below the ceiling had a large crack directly below the shower.

We wanted the ceiling fixed & bathroom totally redone right down to studs.

The contractor split payments based on goals completed. Like after stripping removing everything 3000, after doing tiles installing plumbing 3000. Like that til completion.

Everything seemed great then one week after it was done the ceiling paint began peeling. My original paint that I did wasn’t. The cracks reappeared in the ceiling below. Now if you’re in the shower and you turn on hot water elsewhere the shower makes this humming noise.

I called the contractor a month ago. Nothing yet.
