We went on an 11 day vacation and asked the neighbours to water our plants while we were gone and when we came back some of our plants were very dry leading me to believe they may have been too lazy to do what they said they would which was water our plants. I don’t think they would be dry if they were watered at least one time during the 11 days we were gone.
It depends on the plant, the weather, and the soil. If they are outdoors the wind can also make a big difference. Some plants need water twice a week and others can go over a month without water.
Yea, if they were watered once during 11 days it seems like they would not be super dry. It depends on how much water they used. If they didn't use much water they might still be dry.
I have a lot of plants so I lose track of when they get watered. It's pretty irregular. They can easily go two weeks with no water, sometimes more.

It depends on the type of plant. Cacti evolved to take a very long time to dry out, where broad tropical leaves which evolved in an area where water was frequently and commonly available, so they had no need to evolve retention mechanisms, do not.
