Something like that why did my voice vibrate?
If your throat got hit, that would be a natural reaction. It’s not a medical anomaly
I mean the bag kind of went towards me as I was opening it

Why did my voice vibrate though a bit?
For the same reason you have a voice at all: vocal chords vibrate when stimulated. That vibration rate can change depending on the stimulation.
But I shouldn't worry about it?
No, unless you are experiencing unusually long lasting pain or experience issues with breathing or swallowing following a hit to your throat, you have nothing to worry about
