Depends on the specific laws in your jurisdiction, but where I live, putting a name on a car means you are registering who owns, and is responsible, for the car. But, whoever holds a copy of the title is the one who can sell it. But, part 2, a registered owner can order a replacement title certificate, so they can still end up selling it anyway.
Long way of saying that if you don't want her to screw you over, but still let her drive the car, just add her to insurance and not to the vehicle's registration.

Would she be a co-signer on a loan or an owner. If her name is on the least or financing she would technically be an owner. If she’s a co-signer that just means that if you default on your loan she’s liable
Here in Missouri, I believe she would be ONE of the owners. To sell it, both owners have to sign off on it.
