My husband gave me a car... and I signed the title in my name and a notary stamp. My husband took it to the owner and signed it. I tried to get the car registered but the DMV told me I need other paper work. So I got 30 temporary tag from the place he got the car. Now the owner is calling me and telling I committed fraud and I'm going to jail. He kept harassing me calling me a bitch. Pretending to be the police and telling me he got a police report. I asked him if he can show me.. he never text back. His signature is on the title clear as day. I have a one year old baby and I one in the way. It's stressful.
If both parties signed the title, and transferred ownership to you, then YOU own the car - legally. There's nothing this guy can do. He's harassing you. If in doubt, call the police and have them verify this is the case, and get a report done on this jerk for harassment. The police will NOT take you to jail for this situation.
If the police have a report the car is stolen, show them the title and the signatures. If anything, they'll arrest the guy who "sold" it to you for selling stolen property!
You can also call the DMV and ask what paperwork is needed to prove ownership and then make certain you have that paperwork in place. The 30-day tags tell me the DMV is accepting the title as signed as your vehicle, and showing you as the owner. Don't forget to call your insurance company and let them know you need to have that car added to your insurance.

I have absolutely no idea how buying a car works in the states but it seems to me that anyone who is doing the things you say he is doing, particularly pretending to be the police etc is not a reliable source of information and therefore you should not worry about it.

You shouldn't; even if it IS stolen, you had nothing to do with it. If you're really worried, go talk to the police- you're a LOT less likely to wind up getting in trouble if you if you're the one who goes to them to clear things up.
