The most obvious theory would be that he kept cows for meat as livestock. He noticed that the baby calves drank milk from the cows utters as they were raised. Then a mother cow died for some reason when she had babies. The babies needed to eat to survive so he saw another cow with baby calves nursing and figured he'd milk that cow to feed the orphaned calves. Thus he learned to milk cows. In an act of monkey see, monkey do he trained the orphaned cows to drink milk from a bucket so that they would not die...

For various reasons It can be necessary to hand feed a calf with milk in a bucket. It might have happened that way. The cow won't let the calf suckle for example. It is a big loss to lose a calf so it is worth the effort to intervene.

It is worth noting that people's genetics had to change to drink milk as adults cause not everybody is able to digest lactose.
