Whether you get a response or not, strictly lies on her part.
Just text her something like,
"Hey, haven't spoken to you in a little while. How's everything going?"
You can build up the conversation from there based on her response.
Just know that texts often get stale after a while.
If you want a real conversation with her,
try asking what's the best time to call her.
Or even schedule a day you both can hang out.
Direct contact works sooo much better.

Just see the full lowdown in my response to @Bethany-Louise below. The problem is the great interaction in person, albeit briefly and twice, compared to the texting conversation over long distance.

The thing is she did respond positively and give me a number, when she was under no obligation to do so. I am nervous in part, because she is hot.

How best to keep in touch with a girl who lives far away (I moved firms)? Had great connection in person but only met her twice. Those moments were great. Hard to replicate without more physical contact over the phone.

Just message her and say hello, and ask how she's doing. She'll probably reply she's fine and ask you how you are. Reply and include another question like what has she been up to or something. Just build up the conversation. When you feel it start to dry out, end it with a text that doesn't need a reply like "nice :)" in response to something she says or whatever.
The more you text, you'll quickly start to see real conversation and getting to know each other.

I like your suggestion and probably do this with most of my female friends. The thing is:
1. I know my other female friends more as I have had more than 25 minutes exposure with them.
2. I feel nervous because this girl is really hot.

The only problem I have with the how's it going message is:
1. The girl normally ends up going i'm good, how are you? leaving you with little to build up on. If I ask her again what's she's up to wouldn't it seem intrusive?
2. How do you get the girl to talk so there is something to say? Do you have to send a random quote or something to stimulate conversation? Does it come off as tacky to do that or to wish her a good weekend?

Would appreciate some tips as I am nervous and not a great texter atm.

As in how do you get past:

Initiater: Hello, how are you/how have you been?
Receiver: Hi, I'm good thanks/I've been well. How are you?

Once I messaged her and she did actually respond with something about she had caught a cold and how was I. Trouble is she replied about two days later and I didn't see it till the next morning. By the time I replied, I guess the chance for texting banter had gone.

You just have to forget she's hot and pretend she's a normal female friend.
For the reply to "I'm good how are you?" you can say something like "I'm really good thanks, got a lot done this week" then tell her a little about your week and ask what she has been doing. She'll reply what she's been doing, and you just act interested. You can use something she said to lead to something else, like just say it reminds you of something and tell her about that.

Random quotes, probably not till you know her more and see what'll really make her smile or like it. Wishing her a good weekend or a good week is always nice.

You worked at the same place, so that's already a conversation filler. Like just ask how are things going there and how she's finding work and have a little catch up about work and people you both worked with.

Once you get it going, it'll be so easy.

Thing is I'm worried about the risk of no reply. The last exchange was at new years now. I'm worried about texting her and how to phrase the questions to make her want to talk?

With other girls, the conversation seems to get going.

With this one, in person it was great and natural. In texting, it feels like starting the car and turning it off constantly without actually moving it!

Maybe it's because she has loads of guys after her that she is harder to talk to? She seems to be online whatsapp a lot. Her picture is often her with other girls though and I think these are her besties from work and uni. Never seen a bf.

At the beginning, most the convo will be generic, it's to be expected til you know each other better. But just keep it up. As long as she replies it's cool. Just phrase questions in a way you think you'd like yourself.

Don't worry about no reply, if you get no reply after like three separate attempts then you can worry.

For how you're doing yourself, just keep it polite but causal. Don't say things like "fine thanks" unless you're following up with something else more casual. "I'm cool" or "I'm good" are a more casual way to reply.

On Fridays, the best times to text will probably be around 6 or 7. Late enough that she's probably had time to get back from work and relax, but early enough to catch her before she might go out for the evening.

When the conversation starts flowing a little more, you can probably text during work times when you're bored and stuff.

Some people just aren't great texters til they know you better. If she's always got friend pics up, she's probably always on WhatsApp to them. Like a lot of girl friends make groups on WhatsApp where they'll all talk together, plus always nattering to each other.

I agree it takes more getting to know before texting takes off. I'm worried that I'm fighting an uphill task here because I only got two meetings with her before this and the distance. I can't suggest meeting up till I'm back in her town.

So in terms of conversation, use words like cool or good then yeah? How to stimulate it from there? So go, I'm good, feeling xyz. and hope she responds? Other problem is I want to focus the conversation on her as my life is a little ordinary at the moment! I'd rather talk about her.

Sorry could you give me a sample of what type of line to go down? I really am worried about messing this up tonight. She's a really pretty and smart sophisticated girl. Do talk about you aswel, because it just adds to the conversation. So after you say how you are, you can say you're just eating, or heading to the gym, or meeting a friend.. Just anything. Really, a lot of people usually just says normal every day things when they say what they've been doing. Make the conversation maybe 60 to 70% her and the rest about you. It'll just fill up the conversation so there's more said.

Maybe message her on WhatsApp when you see her online, but go straight off so she doesn't feel pressured into writing a quick reply, then go back on once she has replied.

Two meetings is a better jump off than when a guy gets a random girls number in public or something, so you do have a little head start still.
The first few conversations may only be three or four texts long, but it will progress into longer conversations.

I see your point. I suppose it does vary person to person. In this case, I might not.

Thing is I don't live close to this girl at present. It's complicated, I'll try to summarise!

1. Meet her on an intern placement. (She had a bf then, she's single now.) Talk to her thinking she is hot! Didn't ask for the number to avoid temptation.
2. Join the firm a year later. Saw someone I think looks like her around after a few months, but the girl is in a different department and so can't really speak to her easily.
3. Confirm on a visual check it is her when I see her with a friend in the lobby. But I don't go and interrupt.
4. I'm about to move firms and location a few months later.

6. I turn to see it is not only a very hot girl, but the same girl!!
