To answer your 'update' question... I don't think it's because of jealousy. I think most men would want 2 women because most guys are straight... therefore they are not interested in seeing other guys naked. Women are taught it's okay to intimate with other women and are generally fine seeing other girls nude or kissing or hugging each other or whatnot.

That is a polyamorous relationship. Most polygamous relationships are based in religious tradition, where a threesome would be forbade.
Perhaps you should check the dictionary. Polygamous is defined very simply as having more than one mate/spouse at a time. If you believe every single person in this type of relationship sleeps in separate rooms/beds from each other, then you are pretty naive. Any guy telling you he wants multiple wives is likely sleeping in the same bed with them.
I didn't say that some of them are not like that, because I'm sure they are. But I think its more of a male fantasy than anything else. Most women I know would never do that with another woman. Men want to see woman-on-woman action more than women.

You are getting WAYYY off topic. I am asking about Polygamy as a relationship choice. It has nothing to do with a threesome. Do your research and you will see most Polygamous relationships do not involve threesomes (ie. Amish, Islam, etc...).
YOU are looking at it in terms of religion. In it's simplest form, it simply means a person that has multiple spouses/partners. If you said to most guys 'hey if you happened to have 2 wives, what would you do'... most would tell you they would want to sleep together will all of them. End of story. If you want to know about Islam or other religions and why they're religions expect you to have multiple partners... that is a totally different question. In Islam it would be completely unacceptable for a man to have a husband and a wife... he would probably be killed for it. So DUH, that's why he would have multiple wives, not a husband and a wife.
Whatever, I think it just proves the point that men care more about sleeping with women then establishing an intimate connection with one woman. If you last checked the polls, most women would NOT want a relationship with a man and other woman.

I don't know of any religion that says for a man to take on multiple husbands... so that explains why they have multiple wives. I really don't even think you understand what you are asking.
