How can someone ever love someone else when the person they were with for so long was everything they ever wanted? How could another life with someone new ever match up to what we had together?

You definitely can.
After my marriage ended I met someone new and fell in love again.
She was different from my ex, she was everything I needed on an emotional level, and we were both very clingy and needed to stay in constant communication.
I think you'll find that your ex was perfect for you at that time in your life, but someone else might be better for you now.
People are so different that you can have new, exciting, different experiences with new, exciting, and different people. Sometimes you don't even know what you truly need until you meet that person. Love can be a surprise.

The reality is the grass is not greener on the other side. Forbwe all struggle in different ways and if you can't handle the weaknesses or struggles of one person, how the hell are you going to handle a different person?
The truth is your ex lost someone worth fighting for and you've gained the opportunity to find your person.
The only way to find them is to make yourself better with more. More wisdom, knowledge, love, confidence and peace. Once you have accepted this new reality and have memorialized it you will be ready to start finding your soulmate.
