Why it is considered weird for a man to ignore women that are not his wife or girlfriend?

Ignore as in, in a romantic or attraction way, not as people themselves.

I come from a culture where it is somewhat normal for a married man, naturally if he is wealthy or holds political power, to frequent women that are not his wife. Both my grandfather and my father had mistresses and their wives more or less tolerated that, because "they were men".

Meanwhile I get made fun of by my wife and my mother because I don't look at other women. They laugh because I say I'd rather get another car than another woman, because cars don't give me as much as to worry about lol.

That expectation that married men will have mistresses is one of the things which I strongly disrespect about European culture.

Yep, it's expected especially of men of a certain age and status and above. It's the same as 100 years ago.
You'd be appalled to hear how my mother and his widow defend my father having other women.

I always find it weird when people will either see it is a "virtue" to have a basic sense of decency, or in this case extra weird, if people see it as surprising that you are... faithful and loyal

are you genuine loyal and faithful and just not interested on an affair... or you just don't want to trouble yourself with the many bothers of an affair, lol

Depending on your ability or lack of you ignore them anyway... I find myself tuning them out because things never go my way when I try to break the ice... At about 23 I just stopped all together and found interests that were within reach and Achievable... I don't like viewing people as practice or a test or a challenge.. Nor do I think I should adjust my behavior to anyone's comfort zone... It's easier to be alone..

Because everything is still new, everyday is an adventure. Once you see things for what they really are and have been disappointed over and over again, the adventure stops and it's very very hard to get it back.
