Last week because of my workload I was stressed and I acted disrespectfully with my girlfriend, and I want to fix it. what should I do to apologise?

An apology alone doesn't count much. You should take responsibility on what you did and carry the situation now, that is the minimum to repair, so showing her how you aknowledge her feelings and how wrong what you did was, and why it was wrong. Showing that you understood the reasons behind what you did (which have to be reasons on yourself, not caused by her), so that it gives her the hope you might be work on that the next time and that might not happen again because now you aknowledged it and took responsibility over it.
If she is not convinced that you won't do that again with valid reasons she won't trust you again, or not soon, that is why. You have to prove your care and responsibility over her, to make up for it, because I assume your "disrespectful actions" were a product of lack of responsibility and care, which stress made possible but if now you're not stressed anymore and she doesn't trust you still, then she probably detected it wasn't just being impulsive.

There is a right and wrong way to apologize for your mistake. If you apologize by saying "I'm sorry I had a hard day" or "I'm sorry that you felt the way" that doesn't suffice. A proper apology holds you accountable for your actions. It should go along the line of "I messed up. It was very disrespectful of me to ___, I shouldn't have done that/done ___ instead. I'm sorry to have hurt your feelings. I'll make sure to do ___ in the future so that it doesn't happen again OR I'm willing to talk about how I can prevent this from happening again."

And actually keep your word by improving yourself and not doing it again!

You need to take responsibility of your actions, apologise and acknowledge your wrongdoing. Don't make excuses, just be genuine, maybe take her out or something as a show of good faith. Yes, there are factors to why this happened and you took it out on your girlfriend, but if she is a good girlfriend, she'll try to understand your actions, even if she might not at first.

Apologies are for you not the other person. Proper way to apologize is use anyone of these or a combination of these. They include stating that you recognize what you did, understand it affected the other, a plan of attack to ensure it doesn't continue to happen, and asking for forgiveness

Tell her you are sorry for doing/saying X, Y, Z and that it was wrong of you.

Stop doing it.
