So my roommate said: “move in date tomorrow, how are u feeling”, should I say “I’m a bit nervous because I haven’t finished packing but very excited as well” or should I just say; “I’m just a bit nervous but mostly excited” or something else…?

You know them better than us. I always say honesty is the best policy. But you have to Taylor it to a person feelings. If they're feelings are easily hurt then you probably don't want to be bluntly honest.
