My fiance and I went to a party. He introduced me to everyone. He said "hi [name] this is my fiance [my name]. Every time he introduced me... His long time ex girlfriend happened to be there. He says " [her name] this is [my name]... I stepped in and said "his fiancé nice to meet you"... My question is, why did he not introduce me as his fiancé to his ex out of all people?

He may have felt that introducing you as his fiancee would be rubbing it in her face, and he chose to be more considerate and respectful. He didn't need to announce he found someone better than her.
Next time you have an issue with your fiance, take it up with him in private, without creating public awkwardness. Your response only made you look insecure. My response was how I'd have felt, not how he feels. If you want to know what's going on in his mind, always ask him, not strangers.
I think it was just a classy move on his part. No matter how it would make you feel the reality is this: You got him, she lost him. There is almost no way for that not to come off as him being immature. If you guys all were at the same party and social function then 100% word traveled and she either knew already or found out before she left. He knows her better than you do and perhaps was trying to spare you her drama, causing a scene, being confrontational, or embarrassing all of you. If you trust him enough to marry him then also trust his ability to navigate awkward social interactions with people he knows.
Her point is that she's not insecure, which makes her a more viable mate (which is true) but she's still single and that is odd (and it is). Seemed pretty straight forward actually. She may have meant it more politely... I'm not going to speak for her on bluntness.

Because "this is the one that replaced you" is what that would say, which might as well be starting a fight. It might be a point of pride for you, but for him it was aggro he was trying to avoid.
THAT SAID he should have been more concerned about not aggroing you than not aggroing his ex. I have personally learnt the lesson before that when dealing with women, one has to very clearly take sides or risk pissing all of them off. There is no such thing as a middle ground.
I really don't know and it's a weird situation, if i had a fiance, i wouldn't introduce her to my ex because i don't care about my ex and if i find her somewhere, i'll leave with my fiance... Also i'll be proud to introduce my fiance to everyone and says that she's my fiance...
Because maybe he still respects her and he didn’t want to be a douche and make it seem like he was rubbing her face in it. I’m sure it would have come out later in conversation but sometimes it takes a little tact
It must have been weird for him. Maybe he didn't want to rub her nose in it. Maybe he was just really flustered. I cannotv imagine what I would do in that situation.
Well it would probably seem like mentioning that you are his fiancé would make the wx feel like he is trying to get her jealous or showing off so it doesn’t need to be a bad thing
Probably didn't want to share that publicly because some exes are crazy and will try and ruin the relationship because of the whole "if I can't have you NO ONE CAN!!!"
She’s an ex and you’re the present. Why worry? I’ve broken up with women but I’ve managed to stay civil. You don’t have to avoid exes or feel awkward around them
