That is a good question. Yes there aren't many movies with this concept as you have mentioned. Romantic movies are either in opposite spectrum, either they start as friends and then they become lovers but to start with friends then to becomes lovers and then become friends in the end is a rare concept shown in movies.

However, there is one movie I can think off with this concept. It is a Bollywood movie though titled " Zindagi na milegi dobaraa". It is a not typical romantic movie though

Out of the 3 friends, one of the friends had a girl childhood friend and they become lovers and even get engaged but then in the end the man decides to call it off and break up and they both decide to remain only.

Hence this movie eventually displays this concept of starting as friends to lovers who get engaged and then in the end eventually being to only friends again. However, this part where this is displayed is very small, the majority of the screen time is only about the 3 friends rediscovering themselves.

It is a good movie though. I have watched it a few times.

New Girl I think, and Riverdale they all kinda dated each other at some point then broke up while still being friends it's basically the whole drama of the show besides the gang, killer, cult stuff.
Also Scream TV series did the same thing too unless they're the killer, but that also kinda kept a wedge between them I guess dating but also didn't really.
Not really sure I don't keep track of that lol

HOWEVER,...
not sure if this will satisfy you, but the excellent 2009 movie "The (500) Days of Summer".
The protagonist is Tom (played by Joseph Gordon Levitt) and his coworker/friend is Summer (Zoe Deschanel).
They become a couple.
Then she dumps him.
But, near the end of the film, they have a great conversation at a park (that no longer exists) in Los Angeles.
After that scene, at the very end of the film, is a scene that alludes that Tom may get a new girlfriend... the one after Summer... whose name I will leave blank (Minka Kelly).
So, presumably, Summer and Tom are still friends although Summer has moved on and married someone else (which we learn at that conversation in the park).

This is definitely one of the best romance / comedies ever. I warn you though: It's not told in a linear fashion. We know more or less upfront that "this is not a love story" or something like that.
So, what happens is that we jump around in time in Summer's and Tom's relationship.

Zoe Deschanel got a lot of hate mail for this role but she was a good choice and the people who wrote that didn't understand the film or her perspective and role within the film. She is NOT the antagonist. There is no antagonist in this film. It's about Tom, his philosophy about love and romance, his putting it into practice, yet failing with Summer. Yet, Summer was flightly and didn't believe in all that, yet, by that conversation in the park, the both seemed to have changed. It's that final scene though which makes the film end perfectly.
