How to deal with my fiancé getting upset?

my fiancé has anger issues. he gets angry so easily and it really hurts my head. I think I'm just not used to conflict. My ex and I never fought. Have y'all ever dealt with this? What do you do?

My wife sometimes gets very angry. I just stay calm and let her blow her stack. I say little, if anything, and definitely nothing controversial that would make her more angry. She quickly calms down after she has said her peace.

I threw away a croissant that was on my grandmas food plate and he yelled at me for it. It wasn't touched. He yelled at me bc I was telling him about my life (Im going through some stuff right now) and he said I didn't ask him about his day (which I did ask him about his day)
