Why does everyone say "partner" now instead of boyfriend or girlfriend?

I have been wondering this same thing! I always expect the said "partner" to be the same sex and I'm thrown for a loop when the partner is indeed not the same sex.

Because "partner" is a more polite and neutral word. Just like saying "spouse" instead of husband or wife.
