Because doctors get shit wrong all the time.
The problem is that the medical science is far from conclusive and settled on the issues that you're talking about. We talk about puberty blockers and gender-affirming care like we know that this stuff can be done without cause for concern, but we just don't know that. There are a bunch of lawsuits happening the UK against doctors because they jumped the gun on gender-affirming care before they knew if the treatment was actually right for the kids in question.
When you've had a doctor get it wrong in your own life, you'll understand the concern. Heck, even in my own life, I've struggled with my weight for most of my life. My doctor kept tsk-tsking me and telling me to go on a diet. One day, I got the idea to test my thyroid function, and had him write up the order. Turns out that I'm fat because I have an underactive thyroid.
My doctor for 29 years could have drastically improved my life by thinking to order an $150 test, but he didn't.
Doctors do what they’re told or they lose their job and they only practice what they’re taught at schools. If you want to trust the government and big pharma despite them censoring and banning anyone who question them and despite all their ulterior motives, the money they make and their ideology then go ahead do that. Some people though aren’t inclined to follow the heard of sheep or see the shepherd as someone to trust, but instead come to the conclusion he’s keeping them safe for his own winning. He’ll one day eat them or sell them for profit and for someone else to eat. Doctors used to say it was a good idea to put chicken ass on plague buboes because it would cure the disease. They also thought, up until fairly recently actually, that babies could not feel pain so they wouldn’t give them anaestherics for painful procedures. All the hysterical screaming from the babies during the procedures was just them being scared, why would anyone question the medical professionals on that? Well obviously someone did (probably called them crazy assholes too) and new research found them to be right. There are so many examples of medical professionals and, at the time, current knowledge and science being wrong. There are also many examples of government and authority abusing their power, being corrupt and keeping hidden agendas. But that’s ok, you trust in your medical professionals instead of doing your own research and thinking for yourself. And don’t forget to lick your shepherds ass today either.
Back in the day doctors used to give people lobotomys and it was slavishly unquestionably accepted by people like yourself as a cure for mental disorders. Mostly performed on women and people of color. The history of the unquestioning acceptance extreme of medical procedures in this country is disturbing everything from lobotomies to forceable sterilisation of undesirables and people of color to human experimentation and eugenics programmes that would make nazi doctors blush stuff that today would seem insane and barbaric were readily accepted by people like you without questioning because a guy in a white coat said it was OK. I'm sure in the future these gender reassignment operations and abortions will seem barbaric.

They base the laws to protect children for several reasons.
1) children are being fed a lie and lots of de transitioners have had their lives ruined because of that lie.
2) it doesn't work. Sweden one of the most pro trans counties that has been doing gender reassignment surgeries for over 50+ years the long term study shows it does not work.. it's a short term fix for gender dysphoria, long term the suicide rates skyrocket again 10-15 years post surgery.
3) so ruining a kids life that might just be going through a rough puberty that they will grow out of all for a procedure that will fail to do the intended purpose long term should be stopped
4) did I mention it's all based on a lie? Yeah boys can't be girls ever.

You don’t have to be a medical professional if you understand that cutting off somebody’s dick involved is wrong. If the medical profession says that’s correct, we need to abolish her medical profession and start it over. And don’t tell me that abortion is life-saving care because in every single abortion, it ends up with the death of a child just because you have a kid and so you’re now economically crippled I was single mom doesn’t mean you’re right it’s self is it risk if you’re suicidal, the child should be taken away from you and put up for adoption.
