I 100% agree. Irrelevant of churchills true intentions the quote holds truth for me. We need democracy, and its important for a variety of reasons. It doesn't mean it shouldn't be criticized and it obviously has flaws. Many other forms of Government though have the same flaws and even more. Should we strive to evolve it: in my opinion yes. But the core concept and the core goal; to make citizens have the most important role should be kept by all means.

I mean there are already a few different forms of democracy and some are subjectively better than others. While some differences are objectively harder to do in some countries compared to others.

I strongly agree. I don't see how does a country and its people can survive without democracy. Some countries are at high risk of leaving this system. It's scary!
