if an evil racist risked cancel culture and put a sign in his restaurant "whites only", would they need to warn with speaking, "stop trespassing" before calling cops, to expel and arrest the trespassers from private property, or can they call cops because rely on the sign?

2, would they be allowed to fire a waiter for taking their order, due to violated policy? or simply tell waiters not to serve?

That sign would be considered unenforceable. In that situation since that restaurant provides "public accomodations" they could not refuse service based on race. They could call the police of course, but unless they get a corrupt cop dispatched to them, the police are likely only going to show up to try to maintain peaceful order, not to try to enforce an illegal trespass.

Most states have at will employment, and you can be terminated without cause. But in this case it would be easy to argue that it was wrongful termination since they were fired for refusing to break the law to confirm with company policy.

Laws against discrimination would make those trespassing signs unenforceable so it would not be trespassing.

They would end up on the news immediately after the word got spread around, and the waiter or waitress would be fired and if the owner made it mandatory they would be closed
