How would you feel if the person you are seeing is an undercover cop?

There's this woman I see sometimes who is either crazy or some kind of undercover cop. She always asks, how can I pay for my house and my cars if I don't work in this country? Easy as I work back in Europe plus all that stuff, andn then she asks about my political career there, what kind of people I am associating with etc.

I don't know, she is weird as heck and asks some questions multiple times as if she wants to catch holes in what I say.

In theory undercover cops aren't allowed to do certain "stuff" with their targets, so maybe I should try raising the bar or something?

They can't do things, but that depends on how deep their cover is. Most things they can't do are things that are illegal, but in some cases, they might have to. As for being in a relationship with you, even if they are undercover, that's acceptable.
