Why do non-profits function so corruptly?

Seriously, people make more money working for a non-profit than they'd make in the private sector a lot of the time. I search salaries for some of these organizations, and I'm thinking... you've got to be kidding me, this is absolutely outrageous compensation! Often well beyond fair market value even for a for profit company. Why is the system like this?

Because "non profit" is just code word for 'exempt of taxation'

Legit non-profits that provide services have no income to be taxed. A great example is World Kitchen. They receive grants and donations to do their work. Let's say they have a $100,000 left over from donations on the last day of their fiscal year. That shouldn't be construed as "taxable income"; it's a reserve.

Some non-profits are simply scams. That's a different story.

Because the more they keep for themselves, the less profit they have to give back. They do good things usually but it doesn’t mean they are saints.

Let’s compare that to like the Cadillac of conservative nonprofits in Heritage and you can see. It’s a smaller organization with a lot heavier money going towards a smaller number of people.
