I think because boxes protect the things inside the box, and boxes have boundaries and proper entrances and exits so using the term boxing gives you the impression it's a regulated sport where boundaries are drawn and undesirable behaviour is controlled. It's a way to neutralize the aggressiveness of the sport so that it can be socially accepted.
I suppose you are going to complain the ring isn't round next. And that Christmas presents aren't opened on Boxing day and if they were it should be called Unboxing day.
There doesn't seem to be a good reason. It is suggested a clenched fist looks like a box but that seems pretty weak. Latin and Greek roots like pugilist look unconvincing.

I think "fisting" is something else. Besides,"boxing" is a martial sport which requires technique, not just brute strength or violence.
