Why don’t we see bicep and arm chop attacks used in UFC and MMA?

There are ways of winning a fight which are technically still legal in MMA, which are never seen in MMA, either because the fighters don't know them, or they are incompetent.

One of them is a "double chop block" to the arm following an opponent's hook punch, really what matters is hit them dead center of their biceps with a traditional karate chop. I've had this technique used against me in sparring, and it deadens your arm for a good 5 to 10 seconds.

I was just watching Ip Man 2, which I had never seen the fight with the boxer, and Donnie Yen choreographed that fight correctly. He beat the western boxer by attacking his biceps with chops and elbow strikes until th e boxer couldn't lift his arms anymore, and he also hit him in the ears several times to disrupt his balance.

this would work in MMA, and I know, because I've been on both ends of this fighting technique before. Why nobody uses this sort of technique in MMA is just really making me wonder now.

Basically you play "counter-punch" with the other guy. Every time they jab, you chop down on the forearm with a chop. Every time they hook, you make entry and chop, full power, dead center of the biceps until they can't lift their arms anymore. Once their arms are weak, you can take them out pretty easily.

This goes back to one of the sparring matches I lost against a 2nd Dan okinawan black belt, when he did just exactly that to me. I was a 2nd degree brown belt/2nd kyu at the time, so he was 3 belts above me at the time, but the point is the technique worked, and I had to wave him off of me and surrender, because he was about to pound my face in after that.
