Airbuses tend to be much louder in the passenger area, but you tune it out pretty quick so it's usually only noticed during taxi and takeoff. Other than that, there's very little difference other than what specific airlines have done with their configurations; a cattle car is still a cattle car.
From a pilot standpoint, most pilots I know like flying Boeing planes more, but also have mixed feelings about each model being very distinctively different, while Airbuses are fairly easy to switch between and are generally viewed as being easier/more high tech.
I've been a frequent flyer for years. Most of the aircraft have been Boeing. That's because the routes I fly generally have 737's, so I'm more comfortable in them than the occasional Airbus. I'll have to say Boeing is my favorite.

Depends mainly on the airline and how they arranged the seats. A Boeing 777 is intended to have a 3-3-3 seating arrangement but some airlines choose 3-4-3 and that is very narrow. Same for the Airbus A330, which is intended for 2-4-2 but sometimes 3-3-3 is used.
For narrowbody aircraft, I prefer the Airbus A320 series (including A318, A319, A321 and the neo versions). They're a bit wider than the Boeing 737 series and hence the seats are usually about an inch wider as well.
I'll literally freak myself out if I start analyzing airplanes, so I tend not to think about brands, companies, assembly processes, etc. I ruined a flight one time wondering if the wings were all one piece or two pieces that were bolted onto the frame.

I do not fly anywhere anymore but when I did it was usually a Boeing 727 or DC-9 so I go with Boeing.
The one that never takes off the ground. 😁 I hate flying.
Because it's scary, for starters. If nature wanted men to fly, she would give us wings. Not to mention that there are way too many things that the pilot doesn't have any control over them and there's always the risk for the plane to fall. Let's don't forget about terrorists as well. If the plane falls, it's final, no one survives. At least on the ground in a ground vehicle you have some chances, depending on the speed, whereas with planes no matter the velocity, you're still dead when the plane hits the ground.
Train is my favorite form of travelling. There's enough space in it to walk around and stretch your legs during long journeys.
Once I tried by a bus but due to the heat (it was the hottest part of the summer and the AC wasn't working) I started having hallucinations, so I gave up travelling by bus for distances longer than 1 hour.
