Why would a hotel but someone else next to me when there are many same available rooms?

Depends how early in the day you checked in. It could be that they were expecting more people to show up as the evening went on. That, or it makes it easier on the cleaning staff to clean side by side rooms the next day.

Yes. by grouping rooms together you save on utilities, cleaning staff, room service travel time etc. If you want a quiet room, ask the staff for someplace quiet, not all hotels can accommodate but it works in the larger hotels.

It’s easier to track the number of available rooms and the ones that need cleaning if all the rented rooms are close to each others.

Probably to make it more convenient for the cleaning staff to have the rooms next to each other. I don't know tho

Because it's a hotel. If you have a problem being next to other people rent an AirBnb
